Right now, I'm keeping myself busy with chocolate, vanilla, carrot and pumpkin cupcakes. The buttercream icing is chocolate and vanilla; cream cheese icing for the pumpkin and carrot ones (shall I say....YUMMY!!!!). I did vanilla cupcakes once with a maple buttercream that were TO DIE FOR and just as I was proclaiming "HERE ENDS MY SEARCH FOR PERFECTION!!!" my oldest son said "Mommy you can finish this, I don't like the icing." Sigh. 

Depending on the occasion, the decorations will vary to suit. For example, when I knew the birthday celebration was for a lady who loves flowers, I did all her chocolate cupcakes with floral designs. For the pictures that follow, if you see a theme, that's why. 

Pricing, you ask? $3.00 per cupcake, minimum order of 6. And since I haven't figured out how to mail these, it's pick-up or local delivery only.

If you are needing to borrow special plates or stands for your event, chances are good I have something to suit. This cupcake holder has 3 layers that fit together and is perfect for displaying up to 13 cupcakes. You'll have to assist little ones with their selection - it can be a bit tricky removing one without catching the icing on the neighbours.

A number of motivations were behind the creation of these delicious Pumpkin Cupcakes. Over the past few years, I have developed an intolerance to pastry, so pumpkin pie at Thanksgiving (for me) was out of the question. When searching for a pumpkin cake recipe, all seemed to be full of oil (1 1/4 cups if you can believe it!!) and 4 eggs. Yikes! I can't bake like that and I can't eat like that. So I modified a pumpkin muffin recipe that I already loved and voila, delicious, delectable, amazing pumpkin cupcakes. These are packed full of flavour and made with unsalted butter (of course) and only 2 eggs. And the recipe is huge - 24 cupcakes - that, strangely enough, disappear in no time... And the cream cheese frosting? It adds that little taste of sweetness to make a perfect combination.

Hangin' at the cottage and watching the bird bath? If the warblers aren't cooperating, surprise your guests with something (much less) beautiful to pass the time. Maybe it's just me, but I never tire of plain ole vanilla on vanilla...

Not everyone can indulge in a fully iced cupcake, so for those of us who are watching our sugar levels or waist-lines, I wanted to offer a beautiful treat with smaller decorations and less icing that still delivers that satisfying dessert feeling. This little cutie definitely fits the bill.

Flavours are all the rage, and since I had some lemon on hand, I thought I'd do some experimenting. I left out the colouring so this buttercream does not have much yellow tinge, which is ok because I don't want to fool anyone into thinking they were going to experience a full lemon flavour with each bite. "Plain" delicious with the hint of lemon!

These two photos were an order for a retirement party. I was guessing both gals and guys would be there so I didn't want to do all flowers in case it made anyone feel silly about taking one. Lesson learned: I really love combining the two flavours of buttercream and I find it VERY DIFFICULT to leave a cupcake all chocolate or all vanilla. However, I managed for one of them in case there was someone who really doesn't like chocolate and wanted a vanilla on vanilla treat. And this is a valid point because the chocolate buttercream is amazing and carries a nice chocolate punch, even with the small amounts of detailing.

The fun thing about experimenting is trying different designs knowing the boys will enjoy them regardless. I was really happy with a number of these and will be repeating some of them with an order this weekend.

This order was prepared for a lady who loves flowers. The photo doesn't do them justice. The sunflowers were super cute and the ones covered with small flowers were also very effective. However, my favourites were the two on the left; I'll definitely be doing more of those.

Basic swirl
The basic swirl, that you see on every darn cupcake in every darn bakery, is a little trickier to do than I initially thought. However, now that I've perfected doing it, it's definitely NOT my favourite decoration to do. It's a ton of icing, not that fancy or special (since it's so prolific), and not that imaginative. When preparing even a large order, I rarely include more than two cupcakes with this design, and only if it's ok with the customer and they have teenagers who will devour them. This just ain't Bling enough for me.

This customer 'left it up to me' to decide about the decorations, since the cupcakes were for a dinner party. I didn't know if everyone in the crowd liked chocolate so some of the cupcakes had vanilla buttercream only. The rope design is really effective, as is the thatch.

A chocolate cupcake with vanilla buttercream, I first did the topping with spaghetti only and when I showed it to my son, he said "Mommy, it should have some meatballs!" (I always get outsmarted by my kids...) Anyway, I loved the effect, especially with the "spaghetti" falling down the sides of the cupcake.

Cupcake Wreaths
Both these wreaths are with vanilla cupcakes but obviously they could be chocolate or a combination of both flavours. In my opinion, the smaller 5 cupcake wreath was more effective. I have seen wreaths with 9 cupcakes and there was too much empty space in the centre. Regardless of your preference, these cupcake wreaths make a gorgeous centre piece for your celebration.

These cupcakes were for Easter so I wanted to do a few flowers and a variety of other designs. The swirls have the most icing, and because the customer had two teenage boys, I figured it was safe to include them.

  1. WOW is all I can say about the look of those cupcakes. Wish I had some right in front of me...guarantee they wouldn't last long!
